LUXURYRESORT RANIA - A LA CARTE DINING

Guests of Rania can dine on an extensive range of à la carte meals including the freshest local seafood, Maldivian specialties and international gourmet treats, all prepared by Rania’s skilled private chef James Noble. 

Noble has lead as head chef for three award winning hotel restaurants in the UK, each achieving two of the highly acclaimed AA Rosette awards as well as working in many other prestigious hotel restaurants around the world.  To keep Rania’s guests well-fuelled and their palates inspired, Noble has created an intriguing fusion style that combines the best of Middle Eastern and Far Eastern cuisine with classic French and Latin interpretations.

However the choice of food for Rania guests is endless and does not end there.  Noble works personally with guests to create menus that suit their personal tastes, offering a completely unique and tailor made dining experience.  Before guests arrive, a Rania representative will contact them to discuss their culinary preferences so that all the necessary ingredients can be imported.  What’s more guests can choose where and when to dine, whether it be on deck aboard Rania whilst the sun is setting, or on the islands’ romantic over water pavilion with the stars as an enchanting backdrop.

Diners might start with Seared Scallops Served on a Lime Risotto with Satay Sauce or chose a Cous Cous & Pimento Crème Brûlée with a red pepper relish as a vegetarian alternative. 

For the main course, local seafood is celebrated in dishes such as Native Lobster Served with Coconut Infused Rice & an Apple & Sultana Curry Sauce or Cotriade, a french fish broth with prawns & locally caught fish (possibly caught by Rania guests that day).  Guests wishing to try more of an oriental cuisine can order Seared Tuna Steak Seasoned with Ginger & Soy & Served with a Parcel of Miso Noodles or for something with a distinct European influence Lamb Rump Served with Cocotte Potatoes, Lentils & Red Wine Gravy. 

Deserts are light and sublime with tempting choices such as Baked Fig & Orange Parcels with Honey & Lemon or Soft Lemon Cake with an Orange Drizzle.

Light snacks are also available all day for guests to enjoy by the pool, at the beach, on a sailing excursion or in the villa.  Guests might choose Frikkadels (meatballs with mint raita) or something as simple as an Omelette.

Guests can also enjoy a full menu of cocktails, including Noble’s signature Rania Cocktail, served in a kurumba (young coconut shell) for a traditional Maldivian touch.  All are included in Rania’s all-inclusive rate.  Champagnes and specialty wines, along with fine cigars, are also available at an additional charge.
