The Cuisine at Borgo Finocchieto

Tuscan cooking at its best is simplicity. The menu at Finocchieto is always changing to ensure the freshest, highest quality local ingredients, mixing Tuscan classics with more international and creative choices. Wine pairings from our cellar take your meal to new levels of flavor. The owners chef hails from nearby Casciano di Murlo, where he first learned cooking in the traditional Tuscan way, from his mother – a respected cook in the area. Next, he moved to Lyon, France, where he learned nouvelle cuisine under one of the world’s most prominent chefs, Paul Bocuse, at his three-star l’Auberge du Pont de Collonges. The owners chef is thrilled to finish his career in his home province of Siena, at a kitchen of this caliber and with access to the best of seasonal produce and Tuscan meats. Here, his traditional Italian experience blends with his French training to please varied palates and dining requirements. His garden furnishes many of our vegetables and herbs, supplemented with produce from local markets. His consummate skill with breads and pastries makes breakfast an event at the Borgo, not to be missed.
